Differences in Fats

Because most people are confused in reference to the fats and oils they consume, we deemed it important to clarify these facts. 

Saturated fats are usually solid at room temperature --examples are butter and lard. They do NOT have double bonds in their chemical structure, therefore they can not react with oxygen. This is the reason that they are stable.

Unsaturated fats are usually liquid at room temperature -- examples are vegetable oils. They have double bonds in their chemical structure, therefore their double bonds can break as they react with other elements. This is the reason they are unstable.  When heated or exposed to light or air, they will react with oxygen, creating dangerous free radicals. Unsaturated fats are usually present in nuts and some fruits such as avocados and olives. They can be classified by the degree of unsaturation as either monounsaturated (only one double bond in the chain) or polyunsaturated (many double bonds in the chain). The best oils to use are the monounsaturated, such as olive oil, as they are more stable than polyunsaturated.

Polyunsaturated fats are liquid at room temperature, but far less stable than monounsaturated; they quickly become rancid when they react with oxygen. For this reason, they are not good for you. Canola oil is an example of this type of oil; you need both heat and solvent (hexane) to extract it from the seed.

So, when you read or hear in the news that canola oil is good for you, that polyunsaturated oils are good for you, it is not true. The reason behind this unfortunate misconception is that the writers of these health newsletters are not biochemists. They do not understand the manufacturing process by which these oils are extracted, or the biochemical reactions occurring inside a human body when it is exposed to rancid oils.

Polyunsaturated fats are derived from plants. So when you grind peanuts, you get peanut butter, and the oil in the ground peanuts starts to separate from the mass and rise to the top. The same will happen with other seeds that are highly oily such as almonds, sesame, and soybeans. When you grind these seeds you will get a buttery mass from which the oil will gradually separate and rise to the surface. These oils are not good to cook with, because as we mentioned before, the fatty acid chains have many double bonds, making the oil prone to oxidation, creating free radicals, which are very reactive and dangerous to your health. Eating the raw nuts will give you immediate access to these oils, which is beneficial, but extracting the oil, and leaving it exposed to air, light, or heat will spoil the oil, as free radicals will begin to form.

Exposing these oils to more heat, in the process of cooking with them, will create even more free radicals. This is the reason behind the danger of using polyunsaturated fats for cooking. Yes, you might read that the temperatures you can use with some of these oils are higher, but that does not mean it is good for you -- the higher the temperature that you use for cooking, the more free radicals you will be generating, especially with polyunsaturated fats.

Another way in which polyunsaturated vegetable oils can be turned into saturated oils is by hydrogenation. In this process, the double bonds break and bind to hydrogen. This is how margarine was invented. Hydrogenated fats are also called trans fats, as these oils have been transformed from a liquid fat into a solid fat. This process hardens the liquid oils and makes them more stable, but they are worse for you, as the human body does not know how to deal with these unnaturally saturated oils.

As all liquid oils have some degree of unsaturation, they are prone to reacting with oxygen and turning rancid. The rancidity is caused by free radicals, which  make the oil taste old and bitter and sour. The way to slow down the process of rancidity is to store the oil in a place that is cool and dark with no air.  That is why you see many olive oils stored in tin cans, or dark glass bottles. 

So basically, which oils are good for you? Those that use no heat and no solvents in the process of extraction, for example virgin olive oil, if it is cold pressed, and virgin coconut oil. Do not heat olive oil or coconut oil to high temperatures (fried foods are the worst). Cook with these oils at very low temperatures, or use them in their natural state as a dressing in salads. Beware of eating in restaurants where they might reuse old oils.

Leviticus 7:22-27
The LORD said to Moses, "Say to the Israelites: 'Do not eat any of the fat of cattle, sheep or goats. The fat of an animal found dead or torn by wild animals may be used for any other purpose, but you must not eat it. Anyone who eats the fat of an animal from which an offering by fire may be made to the LORD must be cut off from his people. And wherever you live, you must not eat the blood of any bird or animal. If anyone eats blood, that person must be cut off from his people.' "

The word of God prohibits the eating of both fat and blood. They were never eaten by the people of God.
The fat of the animal was to be offered to God in sacrifice,
(Lev. 3:16), and was not to be eaten.

Leviticus 3:17 “It shall be a perpetual statute for your generations throughout all your dwellings, that you eat neither fat nor blood.”

Some people say those laws apply only to the time of Moses and not now. However, this is not so. God does not want us to eat fat nor drink blood because it is bad for us.

The realization of how destructive pesticides could be to all life on Planet Earth started in the 1960s with the publication by Rachel Carson of her book "Silent Spring." Since then, other types of pesticides different from DDT were developed, but still all of these pesticides are easily soluble in fat, and therefore are stored in the fat of animals, including man.

Not only are these chemicals (which are stored in fat) able to cause cancer, but they are the culprits in the higher incidence of low sperm counts, lower levels of testosterone, and individuals with intersex conditions. http://www.apa.org/topics/sexuality/intersex.aspx.

God in His wisdom forewarned us of the end result of rejecting His commandments and His laws. He told us how to keep healthy, but Satan has deceived the whole world into thinking that they do not need the Lord and do not need His instruction.
